TOMATO SAUCE (Version 3)
Yield: 1gallon (3.75ltr)
Olive oil 120ml
Onion, small dice 225gr
Garlic, minced 4 cloves
Plum tomato, whole, puree 3 kg
Tomato puree 540 ml
Basil leaves, fresh, chopped 9 gr
1/- Sweat the onion in the olive oil until they are translucent.
2/- Add the garlic and sautee it until an aroma is apparent.
3/- Add the plum tomato and tomato puree to the onions.
4/- Simmer the mixture to archieve a heavy consistency.
5/- Add the basil and adjust the seasoning to taste.
